Using What You Have

I love getting creative in the kitchen. Typically, the pantry is well stocked so there are plenty of items to make lots of yummy treats. Recently, I made a lemon filled two layer cake. It's my mom's favorite and I'm trying to perfect it for Easter lunch! The filling was oh so tart and sweet. The cake was dense, in the best way possible. The buttercream was perfectly smooth and creamy. Put it all together (and refrigerate) and it was so good.

The only problem...extra icing. My husband always reminds me, "The pope says 'don't waste food'." He is quoting from an article written by Pope Francis years ago. So when there was extra buttercream, Dan's voice was in my head, "don't waste". I refrigerated the leftovers and waited for an opportunity to use them.

That opportunity came after baking some cookies. I needed a dozen for a cookie box, but the recipe made 18. I decided to make all the cookies and ....wait for it...make sandwich cookies with the leftover buttercream. What's better than one cookie, two with some filling! The result was an over-the-top dessert.

We are given an abundance and so many don't have. Let's use the many gifts and resources we have. Take the time today to thank God for His abundance to you. Then, don't let it go to waste. You never know how sweet that unwasted gift will be for someone else!
